As praised as Kaeya is for his performance in these things, sometimes, even his paranoia and incessant planning cannot account for every danger that can occur. So, as he feels that prickle of danger become a very real feeling of pain, burning into his throat and flaring to his chest and stomach, he thinks Ah. The server was offering to Jean.
There is a ball held in Mondstatd every so often and Kaeya can't say he is overly fond of them. The poison, in particular doesn't help.

Though Jaskier knew Ciri had received Witcher training, he was sure she severely lacked in the Knowledge of Monsters department. And so he was watching out for her. From his place in the bushes with the horses, as the three wyverns sprang to attack the Witcher and Witcher-in-Training, Jaskier’s eyes were only on Ciri.
When Ciri strayed three feet too far into the open, Jaskier sprang to his feet, knowing she had not exactly mastered Aard to fend the wyverns off.
When Ciri got distracted with a wyvern that stooped low, Jaskier was already running. Because what Ciri did not know (probably) was that wyverns were smart, and when one purposefully swung low, it was so another could ambush from behind.
Geralt, who was many feet too far in the open dealing with the third wyvern, could not react in time. And so it was Jaskier who went sprinting without a second thought, even before the second Wyvern had begun its swoop, thinking nothing more than to 'Save her, Gods, anyone but Ciri' and he was barely able to shove her out of the way before he was airborne, the second wyvern’s sharp teeth tearing into his flesh as it flung him.
